Brew coming to Santa Rosa: The Donut Hut is dead. Long live Brew.

Taking over the pastry institution on B Street are Alisse Cottle and Jessica Borrayo, two ex-Taylor Maid Farms Coffee & Tea bigwigs. The couple “in life and in business,” according to Cottle, plans to open a cozy coffee and beer spot that seems perfect for the neighborhood.

They’re coffee fanatics, bringing the hard-to-find Ritual Roasters of San Francisco to Sonoma County.

Their logic? They love the woman-owned company and its philosophy. “We just wanted to bring more great coffee to the area,” said Cottle.

The space has seen better days, so the gals will give it a facelift but vow to retain the cozy neighborhood vibe.

“We want this to be a fun environment, warm and friendly,” Cottle said, adding that they’ve been scavenging across the county looking for fun mugs and dishware. So don’t be surprised if you get a World’s Best Dad cup one morning.

They’ll also be serving up local brews and pastries from baking wunderkind Dawn Zaft of Criminal Baking Co. and Noshery. (She’s everywhere these days!)

They’re hoping to expand the menu in coming months and are giving serious thought to firing up the doughnut fryers again.

Not a bad idea for late Saturday nights around the Tipsy Triangle, and for morning worshippers. Stay tuned for details on the opening.
