Wine and food experience opens at Ledson Hotel

Winemaker Steve Ledson has launched the Zina Lounge Wine & Food Experience at the Ledson Hotel in the former Centre du Vin space, which closed in January for renovations.

The lounge serves intricate, six-course menus paired with wines from Ledson's three labels: Zina Hyde Cunningham, Mountain Terraces and Ledson wineries.

Ledson hired Executive Chef Yoshiharu Sogi to create the lounge's small plates for the wine and food experience. Sogi is trained in Japanese and French culinary methods and has served as a wine specialist for the Society of Wine Educators of America since 2002.

In the current pairing menu, Sogi pairs the 2013 Zina Hyde Cunningham Russian River Valley Sauvignon Blanc with a Duo of Miyagi Oysters, one wrapped with prosciutto and topped with a lime ponzu and tomato brunoise; the other topped with an apple honey mignonette.

Other dishes include Wasabi Accented Clam Chowder with Edamame and Crispy Wontons and Roasted Pork Loin with Raisin Chutney. Asparagus Puree and Red Bell Pepper Coulis.
