Learn how to preserve the season’s cabbage and root vegetable bounty while adding probiotics to your diet with Fermentation 101, a class at 1 p.m. Jan. 14 at Healdsburg Shed taught by its culinary educator Joel Whitaker. Whitaker will demonstrate some basic methods of making a simple kimchi and sauerkraut at home. $65.

Relish Culinary Adventures in Healdsburg will continue its “Food Is Medicine” series with a class on Detox and Cleansing at 6 p.m. Jan. 18, taught by cooks from The Nectary along with naturopathic doctors Chris Holder and Jen Reigle. The class includes a dinner with beverage. $96.

Wind & Rye Kitchen in Penngrove will hold a Fish Butchery and Cooking Techniques class at 1 p.m. Jan. 14 taught by chef/owner Daniel Kedan of Backyard in Forestville.
